From a waterskiing champion to 2023 MasterChef, Rhiannon is now travelling Australia in her SRC-21S, with husband Deano and 24 year old daughter Monique. After 18 years of camping in tents with her kids, it’s her time to live with a bit of luxury.

Rhiannon will showcase her travels in a YouTube cooking series ‘Rhiplenish on the Road’. Her itinerary will include lakeside retreats, special guests, mingling with local producers at vibrant markets, interviewing inspiring individuals like farmers and travellers alike and of course indulging in the finest culinary delights our country has to offer.

One of our friends went through Snowy River Caravans at an expo in Cairns and recommended we have a look in them.
Once the Townsville expo came around, we went and fell in love with the slide out straight away.

The thing I love the most is the kitchen space and how big our dining area is. In actual fact I love everything about our van it feels super fancy and there’s so much space.

Where are you most excited to explore?

I grew up in NSW and have travelled to every Australian state, but we’re excited to hit the road full time and experience everything this amazing country has to offer. I’m especially looking forward to South Australia! The food, beaches, and wineries are next level, and we’ll be training for the Waterski Nationals while we’re there too.

What is your signature dish?

Definitely coral trout won tons in a curry broth! Coral trout is my favourite fish and I love to use the whole fish in this dish to reduce waste. I’m probably known for my South East Asian flavours but I love cooking all cuisines.

What is your favourite dish to cook on the road?

My favourite dish to make in the caravan would be home made tacos using fresh produce that I pick up from the local market. It will usually have a protein like fish, chicken or pulled pork, a slaw, pineapple jalapeno salsa and a beautiful lime crema to bring it altogether.
